I had a blast. I can’t tell you how much I learned. Mainly because a lot of what I learned hasn’t sunk in yet. I know that I will be baking bread in the future and read something and say to myself “so that is what Thomas meant when he said or did such and such”.  There is that instantaneous learning and then there is that subliminal thinking that is going on. Not sure which bread we will make this weekend. Both starters we brought home on Wednesday night are getting prime for usage.   We had a great time. And when you get the gluten free baking course all worked out we are definitely going to take it. One thing that Carol found was that the gluten in the bread we baked didn’t affect her as much as store bought bread. Made us wonder if there is other things they put in the store bought stuff that may be affecting her.

Thomas, we would like to thank you for teaching this great class. We were very impressed by both the content and style of the class. Combining the “Show” and “Do” aspects of learning the techniques and processes of bread making worked very well, and we feel we are primed and ready to bake on our own.
